Momma Lloyd's Homemade Onion Rings

Thinly slice large sweet onion(s)

1 cup of self rising flour
1 egg
melt 1 tbsp of butter
3/4 milk
little salt to batter

Let the batter sit in the fridge for at least an hour before frying...

Melt grease in pan.

Dip onions in batter and fry. Salt to taste.

 

Homemade Biscuits

Add a couple of TBSP of Vegetable or Canola oil to a cast iron pan.

Preheat oven to 450*F and place the cast iron in to preheat with the oven.

In a mixing bowl add 2 cups of flour, 1 TBSP of baking powder and 1 1/4 tsp salt.

Mix.

Add 1 stick of cold butter, cut into small pieces.

Mix.

Add 1 cup of milk a little at a time while mixing.

Add sticky mixture to the HOT cast iron (Oil will sizzle, so be careful!).

Bake 18-22 minutes until golden brown.

Served best with Kerrygold butter and local honey, but any other toppings work well too!
