Mom's Banh Flan

Ingredients:

6 eggs

1 can sweetened condensed milk

Milk (enough to fill 3 of the sweetened condensed milk cans)

1 cup sugar

A pinch of ground coffee

 

Directions:

In a large bowl, put eggs, sweetened condensed milk, and milk. Mix until it has even consistency and color. Set aside.

In a hot pan, put sugar and coffee. Melt at medium heat until all sugar has just melted. Immediately pour into a pan that will hold all the egg mixture and fit into a steamer. Coat the sides of the pan with sugar mixture so that later on the egg mixture won’t stick to the sides. Put the pan into cold water. Cool the pan and sugar until it’s hard and cool.

Mix the egg mixture a little in case it settled. Put it into the pan with the sugar.

Cook in a steam cooker until when you poke it with a stick no water comes up (~30min). Take the pan out and let it cool to room temperature, then put it in the fridge and eat when it’s cold.

Scalloped Pineapple

Serves 6

 

Ingredients:

11 slices bread, crusts removed, cubed (best if a little dried out…I leave the slices on the counter for a few hours)

4 eggs

2/3 cup milk

1 cup sugar

2 cups crushed pineapple

¼ cup butter

 

Instructions:

Place bread in buttered casserole dish. Beat eggs thoroughly, add milk, beat well. Add sugar to pineapple; combine with egg mixture. Pour over bread cubes. Dot with slices of butter. Bake at 350 degrees F for 35-40 minutes.

Matzo Brei

Ingredients:

Matzo sheets and eggs ( 2 sheets of matzo per 1 egg). 

Cooking oil. 

 

  1. Crumble matzo into a colander and run hot water through it. Toss with fork so matzo gets wet but NOT SOAKED. 

  2. Separately beat eggs with whisk or fork and add salt to taste. 

  3. Dump matzo into eggs. Fry on low to medium heat so the insides get cooked (like a pancake). If you like crisp edges use plenty of oil. 

  4. Remove from pan. Sprinkle with sugar, and serve.

Rocky Road Candy

Ingredients:

1 (12 oz.) Bag of semi-sweet chocolate chips

 

¼ cup butter

 

8 oz. jar of dry roasted peanuts (salted)

 

1 (14 oz.) can sweetened condensed milk

 

1 (16 oz.) package of mini marshmallows

Directions:

  1. Mix marshmallows and peanuts in a large bowl.

  2. Put other ingredients in a saucepan over medium heat until chocolate melts. 

  3. Pour over peanuts and marshmallows and mix together. 

  4. Press with wax paper into a greased 9”x 13” pan.
